Eat More Mushrooms!
>> February 15, 2008
Once thought of as having no nutritional value, mushrooms, it seems, are very good for you.
- Tufts University researchers found that white buttons ward off viruses and tumors in mice by boosting the immune system's killer cell activity.
- When it comes to selenium content, mushrooms surpass all other items in the produce category.
- A medium portabello mushroom contains more potassium than a banana.
- Mushrooms are good sources of three essential B-vitamins: riboflavin, niacin and pantothenic acid.
- Vitamin D is highly touted right now because it's believed that most people do not get enough which can cause digestive tract problems, fatigue, insomnia, apathy, and possibly even memory loss.. Did you know that button mushrooms are one of the few natural food sources of vitamin D and provide 15 IU per serving?
- Mushrooms are recommended on Bob Greene's Best Life Diet. They should be since cup for cup, swapping rice or spaghetti for mushrooms can save up to 200 calories. Do that twice a week and you can drop 6 pounds in a year!

Great post! I really like cooking with mushrooms, but I'm sad to say that I don't usually like to eat them.
yup, mushrooms are good and tastes good! No wonder mario eats a lot of them to grow big and strong! n_n
That explains why I don't get sick a lot; DH and I eat mushrooms almost daily.
I love cooking with mushrooms and gobbling them up. We don't eat them as often and a bit of variety would probably help us enjoy them more. I didn't realize they had more potassium than a banana. With a couple of toddlers around the house, the added benefit of memory loss prevention would be helpful.
