That's right! If you're a nut-lover, you can get more bang for your buck by eating boiled peanuts, a Southern specialty.
Studies have shown that peanuts contain powerful antioxidants called isoflavones which may reduce the risk of cancer, diabetes and coronary heart diseases. And now researchers , who included graduate student Yvonne Chukwumah and Lloyd Walker, PhD, of Alabama A&M University, found that the boiled peanuts have up to four times the disease-fighting phyto-chemicals of their raw or roasted counterparts.
Apparently when whole peanuts are boiled in water, the kernels may absorb antioxidants from the shell. Heat may also help release these powerful compounds.

hmmmmm.....I don't know about boiled peanuts. I think I may have to stick to my good old salty nuts,lol!
Yeah, Babyyyyy! I like to buy them from the stands on the side of the roads! My mouth is watering.
When it comes to peanuts, my first choice is roasted, boiled comes next. But after reading this post, I'll make boiled my first choice 'coz antioxidants are important to our health.
I am a nut freak and will have to try this!
