A Healthier Meatloaf

I love meatloaf but always feel guilty eating it. I just found this updated recipe for it, that contains 29 grams of protein, 4 grams of fiber, and just 250 calories, in the September, 2008 issue of Men's Health. I'm trying it out this week, I'll let you know what I think.
Ingredients:
1 cup no-salt tomato sauce
1 lb. lean ground beef
2 egg whites
1 zucchini, grated
1 rib celery, finely chopped
1/2 small onion, chopped
1/2 cup quick-cooking oats
1/4 cup toasted wheat germ
2 Tbsp sliced black olives
1/4 tsp ground black pepper
Directions:
Preheat oven to 350 degrees. Coat 9 x 5 pan with cooking spray.
In a large bowl, combine 1/4 cup of the tomato sauce with the rest of the ingredients and use your hands to mix together. Press the mixture into the pan, and pour the rest of the tomato sauce on top.
Bake for 50 minutes. Let sit 5 - 10 minutes before serving.
